Matt Moore waves away clouds of smoke to get a sneak peek into the kitchens and smokehouses of the Barbecue Belt's most revered pitmasters. Bite by bite, he uncovers the sought-after methods and time-honored recipes that exemplify why the South is the cradle of the best 'cue.

ONE CUT, MANY METHODS Brine, rub, wood, fire, and technique: each has a part in the art of Southern barbecue, but no two pitmasters rely on the same formula or get the same result.

ALL THE FIXIN'S Pitmasters serve up their recipes for wings, smoked chicken, ribs, sausage and house specialties, plus the sides and desserts that make a meal complete.

NEW WAYS WITH 'CUE Because there's more to barbecue than sandwiches and plates, try inspired dishes like Pork Belly Tonkatsu Ramen, Cowboy Nachos, and Barbecue Pot Pie with Cheese Grits Crust.

Matt Moore's work has garnered critical acclaim far and wide, from the BBC and CBC to The New York Times. Moore's narrative style, hosting skills, and recipes have been featured in The Wall Street Journal, Chicago Tribune, Southern Living, and Esquire, as well as on the TODAY show, VH1, FOX, and countless others. Great Book! Lots of great images and good detailed recipes/instructions

If you want to know the stories of a bunch of really great, well known BBQ places in the south, this is the book for you! I was so excited to see that our favorite BBQ place of all time, Wilber's in Goldsboro, NC had a very nice section on the history and finished off with the recipes we have grown to love! Now that we no longer live in NC it is great to be able to attempt to replicate these flavors. The recipes get you pretty close, however you just can't replicate the years of smoke and the wonderful flavor that comes from their smoke house. Each of the bbq places feature a nice write up about the restaurant and then their recipes. Great book well worth it for the pictures and history alone. The recipes are just a bonus!

A Hit

I have read Matt's previous books and they were fantastic. I thought, when I found out he was writing a book on barbecue, just how in the would can he top his "Southern Gentleman's Kitchen"? That is my go-to cookbook! But, once again Matt did it! This book has every method of barbecuing, every kind of barbecue sauce, and the most beautiful pictures of the food he talks about--the longer you read, the hungrier you get. And there's more from Matt More! I love that he has so many side dishes included from bacon and bourbon collards (words cannot do this recipe justice!) to easy peach cobbler with homemade ice cream! I have always loved that Matt is a storyteller. As he visits with the best pit masters, he artfully makes that person come alive. My husband does not cook at all! But he enjoyed the stories. After I finished reading this book twice, I just had to start ordering this book for my foodie friends! Great gift! Yep, Matt has another hit on his hands.
